Pasta By Hand

In Puglia, pasta is less a recipe and more a ritual. Ours begins with flour, hands, and the patience to do it properly.

A spritz, something salty, and the slow shift from afternoon into dinner. The most Italian hour of the day.

Ospitalità Italiana nel Mondo · 2026

A little piece of Italy,
recognised by Italy itself.

Via Bianca has been awarded the Ospitalità Italiana mark — the Italian Chambers of Commerce seal given to restaurants around the world that hold to the quality, hospitality and culture of real Italian dining.

It places us among a small group of Italian restaurants in India to carry it, and it lands close to home: everything here, from the handmade pasta to the regional Puglian cooking, was built to be Italy as it is actually lived, cooked and shared.

Our story

About

Via Bianca means white street. It existed as a feeling long before it had an address — the sun-bleached lanes of Puglia, the coastal light of Le Marche, and the particular Italian talent for making an afternoon last. The arches, the cobbled floor underfoot, the creams and warm beiges: all of it is an attempt to bring that stillness to Greater Kailash.

I trained at Le Cordon Bleu in London and at ALMA, the Scuola Internazionale di Cucina Italiana in Parma, then spent years in kitchens across London, Delhi and Italy. I came back not with a folder of recipes but with a picture in my head of a place where people gather slowly, and where the pasta is made by hand every morning.

So the menu is regional before it is anything else. Puglia's crisp panzerotti and tiella barese, the smoky legend that is Spaghetti all'Assassina, delicate olive ripiene, the deep comfort of a Piemontese bonet. Produce is sourced close to home and used end to end — kitchen and bar share their trimmings, which is better for the flavour as much as for the waste.

On our first anniversary in May we took the kitchen out of the room, launching luxury catering and grazing tables built the Southern Italian way: house cheeses in cascading tiers, fresh panzerotti, regional breads, marinated olives, things finished in front of you. It has since fed diplomats in New Delhi and shown the Assassina off at the Italian Embassy's annual gala.

What comes next is deliberately slow. A wine and beer licence is on the way, and with it a proper Italian aperitivo — small plates, classic spritzes, the golden hour done right — alongside seasonal menus twice a year. The white street began in Italy; it is still being built here.
